Soft fruits such as raspberries and blackberries are desiccated by first adding pectin to the amount of 0,25-9 per cent of the weight of the fruit and then drying, e.g. by means of hot air. The pectin may be added in the form of pectin extract, or of apple pulp mixed with a proportion of skin, or a quantity of the enzyme pectase sufficient to produce the pectin required from material already present in the fruit may be added. The fruit is pulped and may be deprived of its pips, seeds, stones, stalks, and other unrequired parts before drying. The fruit may be subjected to the drying in the form of spray or of pressure extruded streams. |
