摘要 Preparation of lactose from whey comprises separating proteins from the whey by ultrafiltration, removing water from the so-obtained permeate by a membrane separation process, increasing the concentration of the resulting lactose concentrate, crystallizing the lactose contained in the concentrate, further saturating the crystallized lactose concentrate; isolating the resulting partially desugarized permeate; drying the remaining lactose concentrate, where a part of the partially desugarized permeate is fedback to the lactose concentrate, prior to the evaporation step. Preparation of lactose from whey comprises separating proteins from the whey by ultrafiltration, removing water from the so-obtained permeate by a membrane separation process or an electrodialysis or an ion-exchange process, increasing the concentration of the resulting lactose concentrate by evaporation to a minimum of 60% dry weight, crystallizing the lactose contained in the concentrate, further saturating the crystallized lactose concentrate; purifying in a washing and concentration step; isolating the resulting partially desugarized permeate; drying the remaining lactose concentrate, where during the continuously-operated manufacturing process, a part of the partially desugarized permeate that is isolated from the lactose concentrate is fedback to the lactose concentrate, prior to the evaporation step.
