PURPOSE:To obtain an albumen composition convertible into a soft and flexible gelled product when solidified under heating, useful as a food additive, etc., by incorporating albumen with a fatty acid. CONSTITUTION:This composition is obtained by incorporating albumen with about 0.5-20 pts.wt., based on 100 pts.wt. of the albumen on a solid basis, of a fatty acid and a 10-18C saturated or unsaturated alkyl-bearing carboxylic acid (e.g. oleic acid, linoleic acid). The composition is convertible into an albumen-gelled product with soft, compliant palate feeling when solidified under heating, and can make the palate feeling of various foods soft and compliant when added thereto. |
