Albumen is prepared from flesh or fish by boiling with water to which acetic or lactic acid may be added to pH 5--6, pressing, digesting with water containing an organic solvent relatively soluble in water, such as toluene to burst the cells, again pressing, and then drying by heating with a fat solvent which will remove the water as an azeotropic mixture, the solvent layer of the condensate being returned to the still, and finally withdrawing the solvent (containing the fat, in solution) from the material in the still and, if desired, treating the material further to remove fat and remaining solvent. The process is described for the treatment of fish muscle, which is digested with an aqueous solution of toluene, benzene or chloroform, preferably in presence of a little lactic acid, the digestion being repeated if desired, and the removal of water and fat is effected with a solvent such as trichlorethylene. |
