The appliance e.g. backing oven (1), has a cooking chamber (2) and sensors detecting property of the cooking chamber. One of the sensors extends in the cooking chamber, and is selected from a lambda probe (8) i.e. temperature sensor, a hydrocarbon sensor (10) and/or a soot sensor (11) i.e. resistive sensor. The appliance is designed to determine oxygen content of moisture content in the cooking chamber, where the oxygen content is measured by the probe. The appliance is established to determine the moisture content in the cooking chamber based on a decomposition operation of the probe.
