PROBLEM TO BE SOLVED: To provide a method for producing collagen of which the production steps can be omitted, and to provide collagen or gelatin in which commingling of salt is reduced.SOLUTION: A collagen extracting method includes a step (1) of immersing a raw material that contains collagen in carbonated water, or a collagen production method includes the steps of: (1) immersing a raw material that contains collagen in carbonated water; (2) bringing proteolytic enzyme into contact with the collagen contained in the raw material and/or the collagen extracted by the immersion step (1); and (3) removing an insoluble substance from the solution. |
