PROBLEM TO BE SOLVED: To provide a cooking device capable of producing high quality rice cake and an operation method of the cooking device.SOLUTION: A cooking device includes a cooking container 1 accommodating rice cake material including glutinous rice and water, mixing means M for mixing the rice cake material in the cooking container 1, a casing 3 in which a heating chamber 2 accommodating the cooking container 1 is formed, heating means 6 for heating the inside of the heating chamber 2, and control means 8 which controls operation of the heating means 6 and the mixing means M to perform a gelatinization step for heating and gelatinizing the rice cake material in the cooking container 1 and a mixing step for mixing the rice cake material gelatinized in the gelatinization step. The device also includes gelatinization termination determination means J for determining the termination of gelatinization of the rice cake material in the cooking container 1. The control means 8 terminates the gelatinization step and starts the mixing step on the basis that the gelatinization termination determination means J determines termination of gelatinization. |
