摘要 PROBLEM TO BE SOLVED: To provide processed cheeses requiring no high temperature holding or aging after heating fusion, having suitable heat resistant retainability, and also having a reduced secular change in heat resistant retainability during refrigeration storage.SOLUTION: Provided is processed cheeses requiring no aging, also imparted with suitable heat resistant retainability and also having a reduced secular change in the heat resistant retainability during refrigeration storage by adding molten salt including pyrophosphate by 0.1 to 5.0 wt.% and whey protein by 0.1 to 4.0 wt.% to a raw material cheese of 100 wt.%, and heating and melting the same, and also provided is processed cheeses in which, regarding the molten salt, the blending ratio between the pyrophosphate and the other molten salt being 1:4 to 3:2.
