The invention relates to a method for ventilating a drum (10), said drum containing organic matter and bacteria, the method comprising steps consisting of: rotating (100) the drum in order to move the waste along in a direction of movement between an inlet and an outlet of the drum; injecting gas into the drum (110) by means of at least one ventilation device arranged in the drum; and extracting gas from the drum (120) by means of an extraction device.
