PROBLEM TO BE SOLVED: To provide an automatic bread machine for easily baking sweet long-keeping bread using rice when making rice paste.SOLUTION: This automatic bread machine can bake rice bread with good swelling by making rice paste adjusted in a gelatinization degree of rice starch so as to prevent all rice starch molecules absorbing water from being changed into a gelatinous state by heating, and using the rice paste of a weight ratio of rice starch to water of (1:1)-(1:1.5). When using no gluten, the rice paste mixed so as to bring a weight ratio of rice starch containing gelatinized starch to water to (1:1)-(1:1.5) is used so as to promote swelling of dough through contribution to foam growth in fermentation, and when using gluten, a network is formed through interaction of gelatinized starch with gluten to give extremely excellent effects on swelling and shape retention of dough. |
