PROBLEM TO BE SOLVED: To provide a food modifier with which gluten-containing food having excellent palate feeling and anti-aging effect can be prepared in a simple production process: and to provide food containing the food modifier.SOLUTION: The food modifier comprising modified gluten powder is obtained by kneading fresh gluten and reducing sugar; and drying and pulverizing the mixture. The food containing the modified gluten powder is produced. A method for producing the food modifier comprises: a process of producing the fresh gluten from wheat flour; a process of putting the reducing sugar into the fresh gluten while kneading them to obtain reducing sugar-containing kneaded material; and a process of drying the reducing sugar-containing kneaded material and pulverizing them to obtain reducing sugar-modified gluten powder. |
