The present invention relates to a production method for producing hazelnut extract, which method consists of the process steps of roasting the hazelnut fruit, extracting the roasted hazelnuts with the addition of isopropyl alcohol and/or methyl alcohol for 45-90 minutes in a supercritical extractor under 300-350 bar pressure, at 40-50 ºC temperature and under 100-125g/min supercritical carbon dioxide flow rate, and then, evaporating the isopropyl and/or methyl alcohol in the extract. |
