A lipid production method for cultivating a transformant having enhanced expression of a gene encoding protein (A) or (B) below, and producing long-chain fatty acids or a lipid having the same as components. (A) Protein comprising an amino acid sequence represented by SEQ ID NO: 1. (B) Protein comprising an amino acid sequence having 70% or greater identity with the amino acid sequence of protein (A) and having β-ketoacyl-ACP synthase activity.
