The present application relates to cellulose nanocrystals and other anionic carbohydrates and methods of preparation thereof. Specifically, in certain embodiments, the cellulose nanocrystals are modified using ion exchange technology to yield thermally stable or task-specific, dispersible cellulose nanocrystals.

1. A method for producing a dispersible cellulose nanocrystal comprising:
providing an ion exchange column comprising a resin with a cation; and flowing a solution of cellulose nanocrystals through the ion exchange column, to result in at least a portion of the cellulose nanocrystal's cations to be exchanged with the ion exchange cation.
