PROBLEM TO BE SOLVED: To successfully obtain 3,6-anhydro-L-galactose.SOLUTION: A 3,6-anhydro-L-galactose-producing enzyme comprises the following protein (a), (b) or (c). (a) The protein comprises a specific amino acid sequence. (b) The protein comprises an amino acid sequence in which one to several amino acids are replaced in the amino acid sequence of (a), deleted or inserted, and has a 3,6-anhydro-L-galactose-producing activity. (c) The protein comprises an amino acid sequence having an identity of ≥85% to the amino acid sequence, and has a 3,6-anhydro-L-galactose-producing activity. |
