The invention relates to a process for preparing natural distillates of stone fruits such as cherries, apricots and peaches. According to the invention, the process consists in washing and antimicrobially and antioxidantly treating the stone fruits with 10 g/hl aqueous solution of potassium metabisulphite and ascorbic acid, processing them in order to obtain the marc and to detach and separate the stones, the enzymatic treatment intended for obtaining precursors of varietal flavours and free varietal flavours and facilitating juice separation, the alcoholic fermentation by staggered inoculation with two selected commercial yeasts of the Saccharomyces cerevisiae species having acidifying character and beta-glucosidase enzymatic activity, respectively, which releases the free varietal flavours from the precursors thereof, the administration of simple and complex nutrients followed by the second enzymatic treatment and the accelerate ageing of middle distillates aromatized by treatment with chips of small-sized oak and strong roasting. |
