Process for treating waste by particle size reduction and aerobic fermentation, according to which: the waste is introduced semi-continuously, or continuously, at one end of a substantially horizontal rotating drum (2), capable of delivering the pretreated waste at the other end thereof; the drum is ventilated and the waste undergoes, in the drum, the particle size reduction and a first step of aerobic fermentation, for a residence time of appropriate duration, in particular from 2 to 4 days; the pretreated waste is subjected to a screening in order to separate a fraction of finer particle size enriched in organic matter from a coarser fraction; the waste leaves the drum (2) continuously, a storage (4) of the pretreated waste is carried out at the outlet of the drum (2), a ventilation (10, 11) of the stored pretreated waste is ensured, the pretreated waste, after storage, is transferred to the screening (CR), and the ventilation air leaving the storage area is sent to the rotating drum (2) in order to contribute to the ventilation of the drum before being sent to a treatment, in particular a deodorization treatment.
