Monomers, polymers and copolymers are provided that incorporate at least one naturally occurring phenolic compound, such as a plant phenol.

A monovinyl ether monomer having the structure:where R1, R2, and R3 are each independently H or alkyl; R4 is either —O—R10— or absent; R10 is divalent organic group; and —OR is a substituted phenolate group comprising a deprotonated alcohol selected from the group consisting of p-coumaryl alcohol, coniferyl alcohol, sinapyl alcohol, 4-vinylguaiacol, 4-propenylsyringol, vanillin, vanillic acid, acetoguaiacone, coniferaldehyde and sinapaldehyde.
