A method of extracting and concentrating phytosterol from phytosterol-rich by-products (100) is disclosed, wherein the method (100) includes the steps of (a) selecting a feed material (102), (b) subjecting the feed material to a solid-liquid extraction process to yield an extracted product (104), (c) subjecting the extracted product to a reaction process in an ethanol solvent (106), (d) extracting unsaponifiable material by conducting a liquid extraction using non-polar solvent (108), (e) conducting a neutralization process using a non-reacting liquid such as water until neutral pH is obtained (110) and (fj conducting a product purification process via crystallization of product as obtained from step (e) using single solvent such as hexane, acetone or ethanol.
