PROBLEM TO BE SOLVED: To provide a novel microalgal food composition that comprises a microalgal biomass processed into flake, powder and flour.SOLUTION: The microalgal biomass of the present invention is low in saturated fat content and high in mono-unsaturated triglyceride oil content, and can be a good fiber source. The present invention also includes a microalgal biomass which is suitable as a vegetarian protein source or as a good fiber source. Also disclosed in the present specification is a novel method for blending a food composition in which a microalgal biomass of the present invention is used, such as beverage, baked preparation, egg preparation, low fat food and gluten-free food. The provision of a food composition incorporating the microalgal biomass of the present invention to human has an additional benefit of providing a good to health ingredient while achieving a satiety level sufficient to reduce further caloric intake. The present invention also provides a novel microalgal strain which has been subjected to non-transgenic mutagenesis process which is sufficient to reduce the coloring of the biomass produced by the strain.SELECTED DRAWING: None |
