[Classes 14 (ii) and 49] [Also in Groups IV and V] Protein-containing materials or materials containing proteolytic enzymes, such as flour and malt products, are admixed with a small proportion of an iodine halogenide, preferably iodine trichloride, to retard the action of proteolytic enzymes. Flour and malt products when so treated yield bread of a greater volume. The iodine halogenide may be simply mixed with the material or with a part thereof or may be first adsorbed in an adsorbent such as silica gel or potato flour, or may be applied in solution in water or other suitable solvent by mixing or by spraying. |
