PROBLEM TO BE SOLVED: To provide a method for peeling an astringent inner skin of a ripe fruit of Japanese chestnut (castanea crenata) cultivar Porotan refrigerated or the genealogical cultivar thereof without deterioration of nut crack and a flesh surface color.SOLUTION: A method for peeling a skin of a chestnut comprises: a first step of providing a ripe fruit of Japanese chestnut (castanea crenata) cultivar Porotan refrigerated or the genealogical cultivar thereof to boiling water processing; a second step of providing the fruit obtained after the first step to cutting processing; a third step of providing the fruit obtained after the second step to the boiling water processing; and a fourth step of providing the fruit obtained after the third step to peeling processing. In the peeling processing, an outer hard skin and an astringent inner skin are simultaneously peeled from the fruit.SELECTED DRAWING: Figure 3 |
