PROBLEM TO BE SOLVED: To provide a material capable of providing body taste and roast flavor while suppressing foreign taste and peculiar taste to wide range of raw materials and applications.SOLUTION: The above problem can be solved by using a flavor material obtained by heating lactoserum mineral aqueous liquid containing 1 mass% or more of lactoserum mineral or flavor-improving oil-and-fat obtained by shifting flavor component derived from the flavor material to edible oil-and-fat. It is preferable that the lactoserum mineral aqueous liquid contains plant protein. It is also preferable that content of lactoprotein in the lactoserum mineral aqueous liquid is 1 mass% or less. |
