摘要 PROBLEM TO BE SOLVED: To provide a method for producing a fermented seasoning obtained by fermentation using Bacillus subtilis which facilitates hygiene control regarding microorganisms during a production process because of the absence of spores in the fermented seasoning, and enables sterilizing treatment under a mild condition.SOLUTION: A method for producing a fermented seasoning includes: a fermentation process of inoculating spore-forming ability-defective Bacillus subtilis strains obtained by a method by natural mutation into protein-containing raw material to aerobically ferment the raw material; and a sterilization process of sterilizing the fermented material after the fermentation.
