PROBLEM TO BE SOLVED: To provide a yeast highly-containing GABA without adding GABA or GABA precursor from outside, an extract of yeast highly-containing GABA, and a method for producing the same.SOLUTION: There are provided a method for producing a yeast highly-containing GABA comprising: a cultivation step of liquid culturing a yeast in stationary proliferation in a condition of liquid culture medium at pH 7.5 to 11; a suspension preparing step of preparing a yeast suspension by recovering cultured yeast after the cultivation step; and a GABA producing step of keeping the yeast suspension at 40 to 55°C, pH 3.0 to <6.0 to proceed a GABA producing reaction, and a method for producing a yeast extract comprising a step of extracting the yeast from the yeast highly-containing GABA produced by the method for producing the yeast highly-containing GABA. |
