PROBLEM TO BE SOLVED: To provide a browning agent in which when imparting a burning color to a food product surface, the burning color can be efficiently imparted without burning the food product surface itself in a short time, a color tone of the burning color can be properly adjusted, and a color tone of the burning color of the food product surface becomes gradually deep in proportion to the extent of heat treatment or re-heating as cooking by actual roasting, baking, oil frying or the like; and a method of imparting a brown color tone to a food product using the agent.SOLUTION: A browning agent comprising adding a chloride salt of a divalent or trivalent metal ion to fructose and/or saccharide including fructose as constituent sugar. In addition, the agent is distributed to a food product surface without being dissolved in solvents such as water and fat, and heat treated at the food product surface. |
