A method for producing retort sterilized cooked rice, said method comprising: heating and water absorption step A for heating uncooked rice, said uncooked rice having a hardness ratio lower than 1, and allowing the rice to absorb water so that rice grains having absorbed water weigh 2.0-2.6 times as much as the uncooked rice; charging step B for, after heating and water absorption, charging the rice grains in a packing container; sealing step D for sealing the packing container thus charged; and retort sterilization step E for sterilizing the sealed packing container by heating and pressuring. Retort sterilized cooked rice packed in a container that comprises cooked rice prepared by retort sterilizing indica rice, wherein an inert gas is sealed in the headspace in the packing container so as to give an oxygen gas concentration of 1% or more and less than 2%. |
