PROBLEM TO BE SOLVED: To provide antiinflammatory and anti-cancer agents that are stronger than quercetin and sinapic acid; a method of efficiently and safely producing novel quercetin derivatives; and foods, cosmetics, medicines and quasi-drugs, containing the quercetin derivatives.SOLUTION: There are provided an antiinflammatory agent containing, as an active ingredient, at least one compound selected from novel quercetin derivatives of formula (1) and their pharmaceutically acceptable salts; and foods, cosmetics, medicines and quasi-drugs, containing the antiinflammatory agent. |
