PROBLEM TO BE SOLVED: To provide a composition for promoting transesterification reaction of fat and oil, capable of rapidly and industrially producing transesterified oil and fat with a reduced content of a metal salt of fatty acid without a treatment for removing the metal salt of fatty acid such as water-washing treatment and further without reduction in the rate of transesterification reaction, and a method for producing the composition.SOLUTION: The composition for promoting transesterification reaction is obtained by reacting triacyl glyceride with an alkali catalyst and then removing the metal salt of fatty acid from the resulting reaction product. Triacyl glyceride that is a raw material to be transesterified is transesterified by use of the composition. |
