PROBLEM TO BE SOLVED: To provide a production method of a processed liver product having excellent flavor, which allows for reduction in smell unique to liver without spoilage of original preferable flavor of liver, and increases tasty nucleotide components inherent to liver for improvement in taste titer.SOLUTION: A production method of a processed liver product by adding an extract of livestock products includes performing an enzyme treatment with phosphodiesterase before or after addition of the extract of livestock products to liver. |
