摘要 PROBLEM TO BE SOLVED: To provide methods for processing shell ginger (Alpinia zerumbet) components based on the findings that fermentation of shell ginger components contributes to treatment or prevention of periodontal disease, and that anti-oxidant activity and beautiful skin effect are improved by choosing the position of shell ginger to be fermented or by varying the treatment process.SOLUTION: Provided is a method for treating the periodontal pathogen characterized in that the components of shell ginger are fermented after the components are sterilized by using heat or germicide, so that the fermentation product can kill periodontal pathogen but not skin-indigenous bacteria such as Staphylococcus epidermidis and Propionibacterium acnes. Also provided is a method for producing a skin-beauty material characterized in that fermentation is carried out after intact shell ginger or its juice or extract is sterilized by heat or germicide treatment, or the residue of heat concentration is fermented to enhance the tyrosinase-inhibiting activity or hyaluronidase-inhibiting activity. Further provided is a method for enhancing the antioxidant activity of the shell ginger-derived components characterized in that the residue of heat concentration of shell ginger components is fermented.
