PROBLEM TO BE SOLVED: To obtain an apparatus for producing soup stock, and a method for producing soup stock capable of sufficiently extracting an effective constituent from a material of the soup stock in a short time.SOLUTION: The interior of an extraction tank 101 for storing supplied water HW is divided into an upper part and a lower part by a set part 102 for placing a material dm(dm1) of soup stock through which hot water HW freely passes. A circulation pump P1 intervening on a communication way 105 that communicates a positive pressure chamber 103 situating at the upside of the set part 102 with a negative chamber 104 situating at the downside is operated to return hot water sucked from the negative pressure chamber 104 to the positive pressure chamber 103. When setting the material dm(dm1) of soup stock to the set part 102, supplying hot water HW to the extraction tank 101, and operating the circulation pump P1, the hot water HW passes and circulates through the material dm(dm1) of soup stock many times so that a soup stock into which an effective constituent sufficiently dissolves is obtained.SELECTED DRAWING: Figure 1 |
