摘要 FIELD: food industry.SUBSTANCE: invention relates to food industry, namely to production of kvass. Method comprises extraction of clary sage with liquid carbon dioxide to separate miscella, prepared chicory is cut, dried in microwave field till residual humidity about 20 % at microwave filed power providing heating of chicory till the temperature inside the pieces reaches 80-90 °C for at least 1 hour, roasted, impregnated with separated miscella with simultaneous increase of pressure, reducing pressure to atmospheric pressure with simultaneous freezing of chicory, crushed and mashed together with leavened loaves and hot water, then three times is infused with separation of the liquid phase from pulp to produce kvass wort, adding 25 % of recipe quantity of sugar in form of white syrup, fermenting with a mixture of pure cultures of kvass yeast strains M and S-2 and lactic acid bacteria strains 11 and 13, blended with the remaining sugar in the form of white syrup, and bottled.EFFECT: described above method cuts duration of process and increases foam stability of target product.1 cl
