PROBLEM TO BE SOLVED: To provide a method for manufacturing a raw sake for a distilled liquor such as raw Shochu, etc., having a high content of 4-vinylguaiacol (4-VG), which is a precursor of vanillin, a raw sake for a distilled liquor manufactured by the manufacturing method, a distilled liquor manufactured by using the sake for a distilled liquor, a blended distilled liquor, a method for increasing the content of 4-VG in the raw version of a distilled liquor, and a method for increasing the content of vanillin in a distilled liquor.SOLUTION: Provided is a method for manufacturing raw sake for a distilled liquor, which includes a fermentation step of manufacturing, as a raw sake for a distilled liquor, a sake mash by fermenting an admixture obtained by adding, to a malted rice using a raw saccharide ingredient (excluding brown rice), rice bran, water, yeast, and a ferulic acid esterase enzyme. |
