The present invention relates to a meat ripening method. According to the present invention, pork chops can be provided with pork flesh smoothened with a lotus leaf, the fish-like taste and small unique to pork removed, and a soft and elastic meat texture provided. In addition, blood purification, nicotine detoxification, diuretic effects, and constipation treatment can be ensured. The present invention includes: a seasoning sauce production step (S100) in which a seasoning composition and medicinal herbs are boiled at a high temperature in a compression steamer; a sauce ripening step (S200) in which the seasoning sauce produced in Step S100 is mixed with a fresh lotus leaf and ripening is performed; a primary ripening step (S300) in which standardized raw meat is put in, chopped, cut, and wrapped with the fresh lotus leaf for ripening; and a secondary ripening step (S400) in which the primarily ripened meat produced in Step S300 is wrapped with the fresh lotus leaf and is ripened in a compression sealing state along with the seasoning sauce ripened in Step S200. |
