Provided is a method of producing a traditional grain wine, including: a step for producing an yeast; a step for producing a crude liquor using the yeast; and a step for producing a rice-wine mash using the crude liquor, the method characterized in that the yeast includes 1-10 parts by weight of a Persicaria hydropiper extract with respect to 100 parts by weight of grain for producing the yeast, and the crude liquor is produced by: dipping grain including rice in water for 2-10 days; steaming the grain to produce a starch source; adding 1-10 parts by weight of the yeast containing the Persicaria hydropiper extract to 100 parts by weight of the starch source; adding a seed wine produced in a seed wine fermenting step; and fermenting the crude liquor. The traditional grain wine according to the present invention provides advantages of having dramatically enhanced flavor as well as being high in alcohol content in a natural fermentation condition without a distillation process or additionally added alcohol. |
