PURPOSE:To enable the supply of apple in fresh state to consumers by cutting an apple into small pieces, immersing in an ascorbic acid solution, putting into a container made of a specific film, substituting the air in the container with nitrogen gas and heat-sealing the container. CONSTITUTION:An apple is cored optionally after paring, cut, sliced into small pieces and immersed in an ascorbic acid solution having a concentration of 50-100mg/g for 30sec to 2min. After draining, the apple is put into a container made of a gas-barrier plastic film having an oxygen permeability of <=20ml/m<2>. 24hr.atm and the space in the package is maintained to 68-74cmHg for >=3sec to remove air from the package. Subsequently, nitrogen gas is introduced into the package, sealed for 3-15sec under a pressure of -10 to 60cmHg and the opening of the package is heat-sealed to obtain the packaged apple slices. |
