Solutions of fruit juices, medicinal extracts &c. substantially free from alcohol are concentrated by distilling the juice under a high vacuum, freezing the liquid remaining after distillation substantially solid, gradually heating the frozen mass while maintaining the temperature below 32 DEG F., removing the concentrated solutions and adding to them the condensate from the distillation. In the case of very dilute solutions sugar may be added to lower the freezing point. The fruit juice may be distilled under a high vacuum before freezing and the condensate added to the concentrated liquid obtained by the freezing.
