The present invention relates to a method of producing a Hibiscus cannabinus extract with enhanced antioxidant activity and kaempferitrin contents, comprising: a step (a) of mixing water and soluplus to manufacture an extraction solvent; and a step (b) of adding the extraction solvent manufactured in the step (a) to dried and crushed leaves of Hibiscus cannabinus, and extracting a hibiscus cannabinus extract. The present invention also relates to the Hibiscus cannabinus extract manufactured thereby, and to processed foods comprising the same.
