PROBLEM TO BE SOLVED: To provide a food reduced in hardness and stickiness peculiar to rice cake while having flavor and texture similar to those of rice cake, and having physical properties suitable for the repast of a person with the chewing/swallowing difficulty, and a method for producing the same.SOLUTION: A rice cake-like food contains rice powder, a curdlan, a thickener, and water. The rice cake-like food which has a hardness of 20,000 N/mat any time when the center temperature of the food is 20±2°C to 45±2°C is reduced in hardness and stickiness peculiar to rice cake while having flavor and texture similar to those of rice cake, and has physical properties suitable for the repast of a person with the chewing/swallowing difficulty.SELECTED DRAWING: Figure 1 |
