The purpose of the present invention is to provide a hardening accelerator for paste containing gelatinized starch, capable of accelerating the hardening of paste containing gelatinized starch without harming the original flavor or taste texture of food containing gelatinized starch; a method for preparing paste containing gelatinized starch or food containing gelatinized starch using the hardening accelerator; and the paste containing gelatinized starch or food containing gelatinized starch obtained by the method thereof. To achieve the objective of the present invention, provided are a hardening accelerator for paste containing gelatinized starch formed by containing partial starch hydrolysates in which a rate of hydrolysis is 8% or less as an active ingredient; a method for preparing paste containing gelatinized starch to which the hardening accelerator is added; and a method for preparing food containing gelatinized starch to which the hardening accelerator is added. |
