摘要 PROBLEM TO BE SOLVED: To provide a method of producing dry scallop adductor muscles, by which the loss of the taste ingredients of the adductor muscles by the first cooking and the second cooking in traditional production methods can be prevented to improve the extracted ingredients and yield of the product; the browning of the product can be prevented; and a new seasoning can be produced from by-products by-produced on the production.SOLUTION: A method of producing dry scallop adductor muscles includes an adductor muscle-extracting process for treating original scallops by a method except a water-cooking method to extract the adduct muscles, a water-cooking process for cooking the extracted adductor muscles with water, a salt water-soaking process for soaking the water-cooked adductor muscles in an aqueous solution containing sodium chloride, a roast-drying process for roast-drying the adductor muscles with superheated steam after soaked in the aqueous salt solution, and a drying and bean-jam steaming process for drying and bean-jam steaming the roast-dried adductor muscles.
