PROBLEM TO BE SOLVED: To provide a method for measuring the content of milk fat in a food product which has high generality and is simpler.SOLUTION: The method of measuring the content of milk fat in a food sample sequentially comprises: a step of quantitatively determining 1,2-dipalmitoyl-3-butyroyl-sn-glycerol(sn-PPBu)and 1-butyroyl-2,3-dipalmitoyl-sn-glycerol(sn-BuPP)with LC-MS/MS; a step of calculating the content of milk fat from the following [expression 1] on the basis of measurement values of sn-PPBu and sn-BuPP; and a step of detecting 1,2-dipalmitoyl-3-butyroyl-sn-glycerol(sn-PPBu)in a food sample. [Expression 1] The content of milk fat (g/100 g)={The measurement value of sn-PPBu(g)+ the measurement value of sn-BuPP(g)}/K×100, where K refers to the contents of sn-PPBu and sn-BuPP contained in milk fat of 100 g. |
