The present invention relates to a composition for softening crustacean shells, containing Allium hookeri, and a method for softening crustacean shells using the same. According to the present invention, crustacean shells can be softened by adding the composition containing an extract of containing Allium hookeri as an active ingredient when a food containing the crustacean as a main material is made, and therefore, even nutrients contained in the shell are edible and easy masticatory movement is allowable. In addition, when the composition containing an extract of containing Allium hookeri as an active ingredient is added to a food containing the crustacean as a main material, even the fishy smell unique to a marine product can be removed. |
