The present invention relates to a manufacturing method of chopped noodles, and more specifically, to a manufacturing method of new functional chopped noodles using powder of gardenia seed which is the fruit of gardenia and beef. According to the present invention, the manufacturing method of chopped noodles uses gardenia seed and thus can remove the bad flavor of beef broth so chopped noodles with an excellent flavor can be manufactured. Furthermore, the manufacturing method of chopped noodles provides new functional chopped noodles which allows people to easily take the excellent nutrition of gardenia seed and beef. The manufacturing method of chopped noodles comprises the following steps: making dough with a dough composition comprising 85-90 wt% of wheat flour, 8-12 wt% of gardenia seed powder and 1-3 wt% of powdered cold soda; aging the dough; molding the aged dough to prepare chopped noodles; soaking beef into wine including gardenia seed powder; and boiling the beef, kelp, onion, green onion, radish, gardenia seed and water to prepare beef broth. |
