The process according to the invention consists in pre-boiling the dry beans, with or without previous soaking, cooling them, eliminating the water excess, freezing the beans by techniques known per se, with or without defrosting and boiling, resulting in dry beans for consumption, having a protein content of 8.35-8.80%. |
