The present invention relates to an apparatus for harvesting sprouts grown in a tray transferring on a conveyor. The apparatus for harvesting sprouts according to the present invention comprises: a lower part cutting member, fixed to an installed on the conveyor and having a harvesting exit through which cut sprouts are dropped on both sides thereof, for supporting and guiding a lower part of sprouts while the sprouts enter therebetween; an upper part cutting member provided with a single blade for cutting the sprouts by performing straight reciprocating motion in the lengthwise direction of the lower part cutting member while being into surface contact with the lower part cutting member, and provided with a vertical plate for transferring and dropping the cut sprouts into the harvesting exit; and a driving means for allowing the upper part cutting member to perform straight reciprocating motion with respect to the lower part cutting member.
