The present invention relates to a method for manufacturing browned Zingiberaceae which contains a great quantity of functional active ingredients, has not pungent smell and can be stored for a long period of time by fermenting and aging Zingiberaceae, and more specifically, to a method which can manufacture browned Zingiberaceae at a relatively low temperature for a short period of time without performing a complicated manufacturing process such as a moisture supply process or the like by soaking Zingiberaceae into a natural extract for browning acceleration before fermenting and aging processes.
