PROBLEM TO BE SOLVED: To provide a snack food composition which develops flavor of bread, a method for producing snack food using the composition, and snack food.SOLUTION: A method for producing snack food using a snack food composition comprises: (i) a raw material preparation step for including the following into the raw materials: 0.1-2 wt.% of an amino acid mixture of one or more kinds selected from cysteine, cystine, proline, methionine, alanine, and leucine, relative to the total weight of the snack food composition; and 0.1-2 wt.% of a sugar mixture of one or more kinds selected from glucose, fructose, maltose, and sucrose, relative to the total weight of the snack food composition; (ii) an injection step for injecting the raw materials; (iii) a cutting step for cutting the snack food dough; and (iv) a baking step for baking the snack food dough.EFFECT: The snack food composition obtained by the aforementioned production method realizes the feelings of soft tissue and properties of bread and at the same time promotes the secretion of saliva in the mouth to offer moistened texture, thus developing the flavor of bread caused by a Maillard reaction. The produced snack food expresses fermentation odor and baking odor, thus offering moistened texture.SELECTED DRAWING: Figure 1 |
