PROBLEM TO BE SOLVED: To provide a water dispersible composition of micronized lycopene crystal having bright red color tone to overcome a problem that the color tone is stronger red color than a dye formulation by dissolving and emulsifying lycopene crystal in oil and fat, but still mixed color of yellow, orange and red when using a dye formulation to which micronized lycopene crystal is dispersed as a coloring agent.SOLUTION: In manufacturing a water dispersible composition of lycopene crystal, a compound having ratio of absorbance at 430 nm and 575 nm (A430nm/A575nm) of 1.0 or less when absorbance of 0.004% aqueous solution (W/V) is measured can be provided by combining a specific emulsifier and emulsifier auxiliary.SELECTED DRAWING: Figure 1 |
